Wash the basmati rice and soak for about half an hour. Then drain. Heat oil on medium-high heat and saute the drained rice for about 3 minutes. Transfer rice to a rice cooker and add 1.5 cups of water with the bay leaves and saffron water, then cook. Once the rice starts cooking, heat a small pan and toast cumin seeds and nuts. Remove from heat and mix with the raisins and the frozen peas. When rice is about 1/2 to 3/4 cooked, mix the toasted cumin seeds, nuts, raisins and peas. Allow cooker to complete cooking cycle. Mutton Handi Masala Recipe

 How to make Mutton Handi Masala



INGREDIENTS:

Salt 1 tbsp

Chili powder 2 tbsp

Coriander seeds 2 tbsp

Black pepper powder 1 tsp

Ginger powder 1 tsp

Garlic powder 1 tsp

Nutmeg grinded ½ tsp

Mace grinded ½ tsp

Green cardamom grinded ½ tsp

Deghi mirch 2 tbsp

Aniseed 1

Turmeric 1 tsp

Cumin 1 tbsp

White cumin 1 tbsp

Green cardamom grinded 1 tsp

Citric acid ½ tsp

Almonds blanched 15

Desiccated coconut 2 tbsp

Ingredients for Mutton Handi

Boneless Mutton tiny cubes 1 kg

Tomato puree ½ cup

Onion 2 medium sliced, boiled in 1 cup of water and grinded

Yogurt 1 cup

Coriander leaves 2 tbsp chopped

Cream ½ cup

Butter 4 ounce

Oil ½ cup

Handi masala 4 tbsp



METHODS:

FOR HANDI MASALA

Grind all together very finely, sieve and fill in airtight container, and use as required.

METHOD for Handi

Boil mutton in 3 cups of water till nearly tender, mix handi masala in yogurt and apply to mutton cubes, boil onions and blend.

Heat oil, add marinated mutton, cook for 5 mins

Add tomato puree and onion paste, cover and cook for 15 to 20 mins

Add in butter, coriander leaves, cream, and cook for 10 mins till gravy thick.

Serve with hot nan.
