Wash the basmati rice and soak for about half an hour. Then drain. Heat oil on medium-high heat and saute the drained rice for about 3 minutes. Transfer rice to a rice cooker and add 1.5 cups of water with the bay leaves and saffron water, then cook. Once the rice starts cooking, heat a small pan and toast cumin seeds and nuts. Remove from heat and mix with the raisins and the frozen peas. When rice is about 1/2 to 3/4 cooked, mix the toasted cumin seeds, nuts, raisins and peas. Allow cooker to complete cooking cycle. INGREDIENTS OF GRILLED VEGETABLE PIZZA

6 Servings
  • 2 pizza base
  • 2 tablespoon virgin olive oil
  • 3 cloves minced garlic
  • 2 small sliced eggplant/ brinjal
  • 100 grams sliced mozzarella
  • 2 small sliced tomato
  • 1/2 cup basil
  • 1/2 teaspoon balsamic vinegar
  • 3 pinches powdered black pepper
  • 3 pinches salt
  • 6 leaves spinach
  • 10 pieces cottage cheese


HOW TO MAKE GRILLED VEGETABLE PIZZA

Step 1 / 8

To make these scrumptious cheesy pizza, divide the pizza dough into 2 portions and roll them into a medium sized rounds on a floured surface.

Step 2 / 8

Place them on a baking sheet separated by a sheet of parchment paper. Freeze until dough is firm.

Step 3 / 8

Heat 1/2 tsp of oil over medium flame. Add the garlic and stir for 30 seconds. Keep aside.

Brush the brinjals with oil and grill till tender and golden brown.Remove and keep aside.

Brush the dough with some oil and garlic. Sprinkle salt and pepper.

Step 6 / 8

Grill the dough till golden brown and remove. Brush them again with oil and top with cheese.

Add the brinjals, spinach, cottage cheese, tomato slices and grill till cheese starts to melt.

Drizzle some vinegar and sprinkle basil on top. Serve with your favourite milkshake.
